Miso Soup

A traditional staple in the Japanese diet, Miso Soup is a wonderfully distinctive dish with a variety of flavor options. Here's the basics of this anime favorite... use your imagination for the rest.

Prep Time: 20 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 cup dashi soup stock (or vegetable stock)
  • 1 T miso paste
  • 1/2 cup tofu, cubed
  • 2 T chopped green onion
  • Shiitake mushrooms (optional)
  • Cooked pasta (optional)
  • Mixed vegetables (optional)

Preparation:

Bring your soup stock to a boil. If you're adding vegetables, throw those in to boil as well, then add the cubed tofu. Remove some of the soup stock and dissolve the miso paste, then return the mix to the pan. Remove from heat and add remaining ingredients. Viola!

Remember, there are several variations to the miso soup recipe. In addition to the different kinds of miso paste (white is milder; red is salty), you can also use different dashi variations (vegetable v fish) and a wide range of extras that you can mix in the pot. Experiment and enjoy!
